Chinese Pizza! Chinese Pizza!


  Ingredients:(for 12 Cakes)

  • Instant blending flour 600g
  • Salt 1 and 1/2 teaspoon
  • Sugar 2 teaspoons
  • Green onion (chopped) 200~250g
  • Boiling water 280~300ml
  • Cold water 70~100ml
  • Vegetable oil 1/2 cup

Prepare the Hot-Water Dough
  • Mix flour, sugar and salt together in a big bowl. Pour the boiling water into it and blend it well. At the same moment, add the cold water into the dough and knead it until it becomes smooth and soft.
  • Shape the dough into a cylinder and wrap it by cling-wrap loosely. Sit it aside for 40~50 minutes.

Make the Fried Pancake
  • Cut the dough into 12 shares.
  • Wipe a few oil on the table then roll dough out and make it a very thin round pie-shape.
  • Wipe a few oil on the dough and spread some chopped green onion on it. (According to your preference of the green onion, and if you want it taste saltier, you can spread some salt on it.)
  • Roll it up (becomes a long stick shape)
  • Make the long stick dough into a spiral.
  • Repeat the same procedures for all the dough.
  • Flat the dough and roll it out into about 20cm diameter, thin and round pie-shape.
    (Tip: cover it by Cling-wrap then roll will be easier.)
  • Put a few oil in the fry-pan, panfry it for both sides until they turn golden brown. Ready to serve.


  Tips:
  • Make the dough softer will have the better pancakes.
  • Don't use too much oil when panfry the pancakes. (That's deep-fry, not panfry.)
  • Don't use the high heat for panfry. Between Middle and Low heat is the best.
  • When it's done, the pancake should be crispy outside and chewy inside. And you can see there're layers in the pancake.
